Blackberry Blueberry Peach Cobbler

Here is a delicious treat my twin sister whipped up a few days ago. 
Some of the best cobbler I've ever had.

* * * Blackberry Blueberry Peach Cobbler * * *

Ingredients:
1 cup white granulated sugar
1 teaspoon baking powder
3 cups all-purpose flour
3/4 cup unsalted butter
2 eggs
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
zest of 2 lemons

4-6 cups fresh or frozen blueberries, blackberries, peaches
1/2 cup white sugar
3 teaspoons cornstarch
lemon juice from 2 lemons

Method:
Preheat the oven to 375 degrees. Line a 9 x 13 inch pan and spray with nonstick cooking spray. In a medium bowl, stir together 1 cup sugar, 3 cups flour, salt, lemon zest and baking powder. In a small bowl, whisk the egg and vanilla together until combined.

Blend the flour mixture with the butter and egg/vanilla mixture. Dough will be crumbly. Put half of dough into the prepared pan. In another bowl, stir together 1/2 cup sugar and cornstarch. Gently mix in the fruit. Pour mixture evenly over the crust. Crumple remaining dough over the berry layer.

Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely.

  2. This looks delicious! Cobblers/crisps are my favourite summer time desserts. It's such a good chance to use all the seasonal berries =) I'm putting this on my "to try" list!
